At the helm is Executive Chef Scott Smith, a 25-year industry veteran whose diverse experience spans French fine dining at Sassafraz to working under Chef Scott Conant at Scarpetta. Named an official Beef Mate for Australian beef and lamb in 2023, Chef Smith brings passion, innovation, and a global perspective to BlueBlood’s kitchen. He is supported by Corporate Executive Chef and VP of Operations Michael Ewing, a hospitality leader with a distinguished career that has included cooking for dignitaries such as Nelson Mandela and Queen Elizabeth II.
