Turkish-born engineer turned vintner helped redefine what bold, structured red wines could be in Ontario

Adnan Icel, founder and proprietor of Icellars Estate Winery in Ontario’s Niagara-on-the-Lake region, died May 20 of cardiac arrest. He was 59.

A Turkish-born engineer turned vintner, Icel was known for his bold, quality-focused approach to winemaking—most notably for crafting full-bodied reds in a region better known for its cool-climate varieties. His wines, produced exclusively from estate-grown fruit, brought a new level of structure and ambition to Niagara’s portfolio.

Born in Ankara in 1966, Icel built a successful career in mechanical engineering and founded his own company before immigrating to Canada. Seeking a change in lifestyle and driven by a longtime fascination with wine, he and his wife Elif established Icellars in 2010, planting their vineyard in 2011 and launching the winery’s first vintage a few years later. With a minimalist approach to intervention and a keen eye on balance, Icel carved out a niche producing wines that blended Old World restraint with New World power.

Icellars quickly garnered attention for its cool-climate syrah, cabernet sauvignon, merlot, and bold red blends, offering a new model for what was possible in Niagara. It was noted among wine insiders that Adnan didn’t follow trends. He built something uniquely his own—and it worked.

Beyond the winery, Icel was known for his generosity, humility, and tenacity. A private yet deeply respected figure in Ontario’s wine community, he mentored younger producers and remained committed to local collaboration and excellence.

He is survived by his sons Arda and Tolga, his dogs Lulu and Ruby, and his partner of 30 years, Elif.

A public visitation will be held at Icellars Estate Winery on Wednesday, May 28, from 2:00 to 6:00 p.m.
