The team behind Two Sisters Vineyards unveils a new Niagara-on-the-Lake destination for premium wine, food, and events

Niagara wine country has a new landmark. Stone Eagle Winery, the sister estate to the award-winning Two Sisters Vineyards, officially open as of November 5th, brings a fresh vision of modern luxury and elevated hospitality to Niagara-on-the-Lake.

VineRoutes editors were invited to visit for a guided media tour, experience the Signature Experience tasting, and enjoy a lunch that perfectly showcased the winery’s culinary capabilities. It’s clear this is a destination designed for more than just tasting wine.

Founded by sisters Angela Marotta and Melissa Marotta-Paolicelli, the women behind Two Sisters Vineyards, Stone Eagle was conceived as a purpose-built estate dedicated to small-lot, premium wines, thoughtful food pairings, and immersive experiences.

Set on a 36-acre property, the winery blends architectural elegance with warm hospitality, creating spaces that feel both refined and welcoming. Every detail — from the soaring ceilings and light-filled rooms to the hand-carved stone eagles that inspired the name — reflects a careful balance of artistry and craft. Its clean lines and open spaces mirror the philosophy behind the wines: precision, balance, and structure.

Crafting wines for an elevated tasting experience

Under the direction of Two Sisters winemaker Adam Pearce, Stone Eagle’s portfolio is intentionally focused. The winery produces just five wines — each made with low-intervention methods and sustainably grown fruit. The approach allows the character of the vineyards to shine through, resulting in wines that are expressive, structured, and unmistakably of Niagara.

The flagship Stone Eagle Red Label, for instance, blends cabernet sauvignon, merlot, and cabernet franc into a rich and layered expression that balances power with finesse. It’s complemented by the Special Selection, a barrel-aged small lot that represents the pinnacle of the estate’s craftsmanship, along with an elegant Eagle Eye White (a sauvignon blanc–sémillon blend), a delicate rosé made from cabernet franc, and a textured Traditional Method sparkling that underscores the winery’s precision and polish.

Stone Eagle’s Signature Experience weaves together wine and food in a way that feels intentional and seamless. Each tasting includes a guided flight of the five wines, paired with small, artfully prepared dishes that heighten the sensory experience. From the Stone Eagle Sparkling with pan con tomate and white anchovy, to the Stone Eagle Red paired with short rib arancini and black garlic aioli, each pairing illustrates the synergy between the kitchen and cellar.

Beyond the wines, Stone Eagle is built to host. The estate includes seven private tasting rooms, a light-filled ballroom, a terrace overlooking the vineyards, and an intimate restaurant serving locally sourced, seasonal Mediterranean-inspired dishes. Sustainability is central to the estate, with Certified Sustainable vineyards, vegan-friendly fining agents, and low-intervention winemaking practices at every step.

Ultimately, this is a destination that stands as a confident and forward-looking addition to the region’s most distinguished estates, and a statement of where Ontario wine is heading next.

Stone Eagle Sparkling (NV)

A refined blend of pinot noir (67%) and chardonnay (33%), Stone Eagle’s Traditional Method sparkling immediately impresses with its balance of tension and texture. Aged on lees and partially fermented in neutral French oak, it shows remarkable depth. Aromas of crisp apple, citrus zest, and blanched almond evolve toward delicate notes of white mulberry and cranberry. The palate is creamy yet focused, offering layers of orchard fruit and subtle brioche. Its poise and persistence elevate it beyond expectation. ($120)

2022 Eagle Eye White

This sauvignon blanc–sémillon blend is a study in precision and proportion. Each variety is barrel-fermented and aged on lees for 10 months, creating a supple, rounded texture that complements its bright aromatics. Notes of ripe pear, lemon, and orchard blossom mingle with faint tropical tones and herbal lift. On the palate, it’s layered and expressive — balancing vibrancy with weight. Its mineral-driven finish and overall refined complexity speak to its premium-level craftsmanship. ($90)

2024 Stone Eagle Rosé

Sourced entirely from the estate’s vineyard and crafted from 100% cabernet franc, this rosé demonstrates both structure and sophistication. Matured in small Acacia barrels for five months, it gains a subtle texture and aromatic complexity rare for the style. Hints of wild strawberry, rose petal, and dried herbs lead into a palate that’s silky and persistent. Its savoury undertone makes it an exceptional food wine — showcased beautifully at the estate with Neapolitan zucchini, mint, and goat cheese. Elegant and quietly powerful, it’s a rosé that also speaks to freshness. ($58)

2020 Stone Eagle Red Label

A blend of cabernet sauvignon (40%), merlot (39%), and cabernet franc (21%), this vintage embodies the estate’s vision for balance and structure. As winemaker Adam Pearce says, “(the wine) makes itself based on the year. Sometimes this is merlot dominant, while other times it can see mostly cabernet franc. The idea is to make a consistent wine.” Deeply coloured and concentrated, it opens with aromas of blackberry, cassis, leather, and toasted spice. The palate follows with layers of black fruit, dried herbs, and subtle oak integration — bold, yet seamlessly composed. A generous mid-palate and long, savoury finish. Originally crafted as the premium focused wine of the Two Sisters Vineyards brand (since 2012), this is undoubtedly the defining wine for this new estate and a benchmark for Niagara’s ability to produce world-class Bordeaux-style blends. ($150)

2020 Stone Eagle Special Selection

Produced only in exceptional vintages, the Special Selection is the pinnacle of Stone Eagle’s portfolio — an elevated expression of merlot (46%), cabernet sauvignon (45%), and cabernet franc (9%), aged for three years in a combination of French and American oak. In the glass, it’s dark and brooding, with aromas of black cherry, licorice, sweet spice, and pipe tobacco. The palate is plush and expansive, its depth driven by both concentration and fine-grained tannin. The inclusion of a small percentage of appassimento fruit adds subtle sweetness and power, bringing balance to its formidable structure. It’s a statement wine — and one that lingers as much for its precision as its presence. ($195)
