From cellar-deep collections to tightly edited selections, these award-winning restaurants prove that the best wine lists are about intention, not just inventory
A great wine list does more than offer choice. It communicates values. It reflects a restaurant’s philosophy, its relationship to producers, and its sense of place, with the confidence to guide rather than overwhelm.
Across Canada, a growing number of restaurants are moving beyond the idea that “more is better,” instead using wine as narrative: sometimes globally expansive, sometimes regionally focused, sometimes deliberately restrained. But always intentional.

Here, VineRoutes highlights award-winning restaurants whose wine programs don’t merely support the menu; they actively shape the dining experience. We believe wine is a storytelling medium—one that reflects the people who make it, the places it comes from, and the moments it creates at the table. The restaurants highlighted here understand that truth. And in an era where choice is endless, that clarity has never mattered more.

Broadly curated: Depth, breadth, and the confidence to let guests explore
There is still a place—an important one—for the grand, cellar-driven wine list. These are programs built for discovery, celebration, and serious wine drinkers who want the freedom to roam across regions, vintages, and price points. When executed well, scale becomes a service, not a barrier.

What sets the Vine Award winning REIGN apart is how seamlessly its wine program integrates with its hotel setting: flexible enough for casual diners, yet deep enough to reward serious exploration. What hotel, you might ask? Why, none other than the iconic Fairmont Royal York. Spanning classic European regions and internationally recognized producers, the wine list is also balanced with thoughtful Canadian representation, ultimately encompassing a wide range of styles and price points. “Our wine list tends to change fairly frequently, as wines that excite us move in and out of availability and season,” says James Grant, beverage director. “Our approach is to generally look for wines that are classical in nature but not mass production, which means a more exciting wine list, but one that needs to be a bit more fluid.” (Read more about REIGN here.)

Few restaurants in Canada can match the sheer scale of Harbour Sixty’s wine program. With a total inventory exceeding 23,000 bottles and more than 3,200 distinct selections, the list is built for serious exploration. Anchored by classic regions—Bordeaux, Burgundy, Barolo, and Napa—the cellar balances depth with maturity, offering diners access to wines that are not only prestigious, but ready to drink. More importantly, its strength lies not only in its inventory, but in how it is stewarded, reinforcing its status as one of the country’s most complete fine-dining wine programs. “We’re working hard to elevate the wine program here,” says wine director and head sommelier Christian Perrault Hamel. “Recognitions like [winning the Award of Distinction from VineRoutes] helps put us on the radar of diners who may not yet know how wine-focused our approach truly is.”

Regional storytelling through wine – When geography becomes the guiding principle
Some of the most compelling wine lists today are built not on size, but on focus. These programs use wine to tell stories—about land, culture, and producer—often mirroring the philosophy of the kitchen itself.

“When you look back over the last [19 years] of operating this restaurant, it’s amazing how much better Niagara producers are in terms of consistency,” says James Treadwell, who directs the wine program at his family’s namesake establishment. Treadwell’s 700-label wine list is deeply rooted in Niagara (about 60 percent!), reflecting the restaurant’s long-standing commitment to local agriculture and seasonal cooking. Treadwell boasts that Ontario wines are not treated as an obligation here, but as a point of pride. The list evolves alongside the region, offering guests a snapshot of Niagara’s growth, maturity, and stylistic range. This applauded focus earned them the VineRoutes Regional Excellence Award in 2025 – the only restaurant to earn the distinction.

That was an important goal, given that our food philosophy is very much local.” (Read more about The Elora Mill here.)

One should expect that a benchmark (Michelin Star and VineRoutes Award of Distinction winning) Italian restaurant’s wine cellar should be extensive. In fact, Don Alfonso 1890’s wine list is a masterclass in Italian storytelling. From Piemonte to Sicily, its purpose is clear. With hundreds of selections that align with Italy’s diverse culinary traditions, the cellar functions as a working atlas of Italian wine. Other international bottles play a supporting role (don’t worry, there are many), ensuring flexibility, while the list’s depth allows diners to explore both iconic labels and lesser-known expressions.
